INGREDIENTS:

  • 1  carrot
  • 1 parsnip
  • Handful of broccoli, roughly chopped
  • 2 garlic cloves
  • Olive oil
  • Rosemary
  • Handful of kale
  • Natural yoghurt
  • Almonds
  • Parmesan cheese
  • Seasoning

 

METHOD:

  1. Roughly chop up carrots, parsnips, & broccoli. Spread them across a baking tray. Add a few cloves of garlic and cover the vegetables in honey, olive oil, rosemary, thyme, salt & pepper. Cook in the oven at 200C for 20 mins.
  2. Once out of the oven. Serve warm over a bed of sautéed & seasoned kale. Then finish it all off with a few dollops of natural yoghurt, a generous grating of Parmesan cheese, pomegranate seeds & a sprinkling of flaked or roughly chopped almonds.
