WARM SPRING SALAD

INGREDIENTS:
- 1 carrot
- 1 parsnip
- Handful of broccoli, roughly chopped
- 2 garlic cloves
- Olive oil
- Rosemary
- Handful of kale
- Natural yoghurt
- Almonds
- Parmesan cheese
- Seasoning
METHOD:
- Roughly chop up carrots, parsnips, & broccoli. Spread them across a baking tray. Add a few cloves of garlic and cover the vegetables in honey, olive oil, rosemary, thyme, salt & pepper. Cook in the oven at 200C for 20 mins.
- Once out of the oven. Serve warm over a bed of sautéed & seasoned kale. Then finish it all off with a few dollops of natural yoghurt, a generous grating of Parmesan cheese, pomegranate seeds & a sprinkling of flaked or roughly chopped almonds.
