  • 2 small tortilla wraps
  • 2 eggs, scrambled
  • Spring onion, finely sliced
  • 1/2 bell pepper, finely diced
  • Avocado, finely sliced
  • Fresh parsley, chopped
  • Tbsp Greek Yoghurt, with a squeeze of lemon & mixed through.

Tomato Salsa:

  • 5 Cherry tomatoes, finely diced
  • 1/2 red onion, finely diced
  • 1/2 garlic clove, finely diced
  • Olive oil, TINY bit
  • Salt
  • Pepper
