ON-THE-GO YOGHURT & GRANOLA POT

INGREDIENTS:

  • 3 tbsp Granola - see previous granola recipe for this.
  • 3 tbsp Greek yoghurt
  • ½ handful raspberries
  • ½ handful blueberries
  • Flaked almonds, toasted
Berry Coulis: Optional
  • ½ lemon
  • 150g raspberries
  • 2tbsp honey

 

METHOD:

  1. First, make the berry coulis by adding the ingredients to a pot. Cook over a medium until the raspberries start to break down then blend it altogether until smooth.
  2. Layer the pot by starting with the berry coulis and a dollop of Greek yoghurt, follow with some fresh raspberries, blueberries and granola. Repeat this over twice. Finish it off by sprinkling the toasted flaked almonds on top.
  3. Seal it up and store in the fridge to grab when you are heading out the door.
